While waiting to start a BBQ, I was watching Chuck's Day Off and wrote down the recipe for his Molten Lava Cake. It's so simple and so good, that I'm glad I have this on hand whenever I get any chocolate cravings.
Courtesy of Food Network with some modifications. For Four Servings
- 1/2 cupbutter margarine
- 180 gramsdark chocolate chocolate chips
- 3 eggs, room temperature
-1/3 cup sugar
- 2 tablespoons flour
Directions
- In a pot over medium heat, melt the margarine and chocolate together and mix until smooth
- At the same time, beat the eggs (and sugar if you're adding it in the recipe) until pale and thick - Combine the chocolate & eggs and mix, then add the flour in and mix
- Spray Pam the ramekins (you can also use butter and lightly sugar it and tap it out, which I omitted), and add in the mixture to fill about 3/4 of the ramekins.
- Preheat the oven to 400 F and bake for 10-12 mins. The shorter the time, the more liquid your centre will be.

- Let it rest for 5 mins then serve with Vanilla Ice Cream
After making it a couple of times, I found that you could omit the sugar if you're using chocolate chips since they're sweet in itself (I had a big sugar attack the first time I made it with all that sugar). I also tried making it with and without the dusting of sugar on the ramekins, and though it made it look more professional seeing the sugar coating, I still found it too much sugar so I like to omit that step too.
Here's some pictures for all the chocolate lovers out there. YUM.
