For this cupcake I just used a no-name cake box mix (I have a cupcake from scratch recipe but I'm holding out on it until I get a Kitchen Aid Mixer!! so who knows when). The chocolate mix wasn't as sweet and decadent as Betty Crocker so I might have to switch back to the brand name. After they were cooked, I cut out the centre and filled it with Cherry Pie Filling. Mmmm Mmmm. Van wanted the Cherry Pie Filling to be a surprise so I put the tops back on afterward.
Van was insistent on having whipped cream on top to fulfil the Black Forrest Experience so we didn't buy any icing. Now the asian in me realized after scooping out the centre that there was alot of cupcake leftover that's going to be wasted! And my first thought was.... Cake Balls!! But I need icing for that.... Damn You Van... Damn You. Anyways here's a link to Bakerella for a Red Velvet Cake Ball. I myself like to do a chocolate cake ball with a white chocolate coating.
Here's some helpful variations of the Cake Ball recipe.
1) Use only 1/2 to 3/4 of a can of cream cheese frosting or it will be very sweet
2) add some vegetable oil into the melted chocolate which will thin it out and cause a thinner chocolate coating (again to decrease the sweetness). My first round of Cake Balls everyone said they were having sugar attacks and that left me eating 70% of them.... :(
