Sukju Namul (Korean Bean Sprout Salad)
What better way to celebrate Easter Long Weekend with Family and a Korean BBQ?
We marinated the Beef Short Ribs in the Kalbi Sauce we bought at TnT. Afterwards I found quite a few recipes for Kalbi so I will definately try from scratch next time.
I then attempted to make Sukju Namul. I found quite a few variations online and decided to try 2 recipes for the dressing. Some called for blanching the bean sprouts, while others said to cook for 2-3 mins in boiling water then rinsing with cold water. I opted to do the 2-3 mins version and it turned out well.
Dressing 1:
- 1 garlic (minced)
- 1 green onion (chopped)
- 1 tablespoon light soy sauce
- 2 tablespoon seasame oil
- pinch of sugar
Dressing 2:
- 1/2 teaspoon soy sauce
- 2 teaspoon vinegar
- 1 teaspoon seasame oil
- 1 teaspoon sugar
- 1/4 teaspoon salt
-1/8 teaspoon cayenne pepper
- 1/8 teaspoon black pepper
- 2 green onions

Of course I was a fan of dressing 1 (on the right), while van loved the sourness of the vinegar in dressing 2 (on the left). I loved how simple the dressing recipes were and how I happened to have all the ingredients and didn't need to spend anymore money.
This was also the day I ate 2.5 Dinners! (I know I shouldn't sound so proud). Quick explanation of family dynamics. Vans parents are a eat and go type of people. My parents/brother are a always late type of people. Sandy/Jamie are unpredictable (somedays they're on time and other days nope lol). Loving our families we decided to do a open house for dinner. Arrive when you want and eat. Vans Parents came in at 5:30pm and we ate with them, they then left at 6:30pm. My side of the family came in around 6:45pm and I decided to eat again cause the ribs were soo good! Sandy/Jamie then came in at 8:30pm after she was off work and since there weren't many ribs left, I opted to snack on various other items instead of eating a full meal again (BUT I would if I could've).
Happy Easter Everyone!
