French Onion Soup

About a month ago we were at Save-Ons and you could buy a small bag or big bag of onions for pretty much the same price. Of course the Asian in me bought the big bag while Van kept throwing me disgusted looks. Fast forward to 1 month later, and the bag isn't even 1/2 empty yet. So what to make with so many onions? What about French Onion Soup!

I loved the recipe I found online cause it's so simple and basic, so here you go:
-4 lg onions
-1/4 c. butter
-1 tbsp flour
-6 cups beef broth
-1/2 to 1 tsp tabasco
-French Bread Toasted
-Mozzarella Cheese

Cook the cut onions in the butter until transparent. Then add the flour and blend. Once complete, transfer everything to your slow cooker and add the beef broth and tabasco. Cook on high for 4-5 hours or low for 8-10 hours. Then take it out and place in an oven safe bowl and top with bread and cheese. Place under broil til you get a nice browning of the cheese.


We ended up using plain buns and it didn't quite have the crispiness of french bread but it still worked. Also I noticed a lot of recipe use Swiss or Gruyere Cheese, but Mozzarella worked just as well. I'm excitied to try it with french bread one day. MMmm the picture makes me crave for it again.
